KOREA KIMCHI FESTIVAL 2023


The Korean Cultural and Education Association in Belgium (KOCEABE), an organization dedicated to introducing various aspects of Korean culture to local residents, is hosting a culinary event called “KOREA KIMCHI FESTIVAL 2023”. This festival offers a unique opportunity to participate in making kimchi.

Kimchi is a traditional Korean side dish made from salted and fermented vegetables, primarily napa cabbage or Korean radish. It is seasoned with a variety of ingredients, including gochugaru (Korean chili powder), spring onions, garlic, ginger, and jeotgal (salted seafood). Kimchi is a staple in Korean cuisine and is served as a side dish with nearly every meal. It is also used in a variety of soups and stews.


There are hundreds of different types of kimchi, each made with different vegetables as the main ingredient. Traditionally, winter kimchi, known as kimjang, was stored in large earthenware fermentation vessels called onggi. These were buried in the ground to prevent freezing during the winter months and to keep cool enough to slow down the fermentation process during the summer months. These vessels were typically kept outdoors on special terraces known as jangdokdae. Nowadays, it’s more common for households to use kimchi refrigerators.
